Creamy Alfredo pasta, exotic mushroom with grilled chicken breast
Ingredients:
- 1/4 finely sliced shallot
- 1/2 tspoon of crushed garlic
- Fresh herbs finely chopped
- 2 spoons of butter
- 1 tspoon of canola oil
- 15g of grated parmesan cheese
- 150 ml of fresh cream
- 30g chopped bacon
- Fresh chicken breast
- 40g shiitake mushrooms/ (any mushroom of choice)
- 150g fettuccine pasta/ (any pasta of choice)
- 1/2 tspoon of paprika
- A pinch of cayenne pepper
- 1 tspoon of lemon pepper seasoning
- Salt and crushed black pepper to taste.
Method:
- In small pot of boiling water, cook your pasta for a good 8 minutes (al-dente). Reserve a small amount of your pasta water for later use.
- Lightly season your chicken breast with lemonpepper seasoning and cayenne pepper.
- In a pan on medium heat drizzle with canola oil, fry off your chicken breast, cooking each side for 4 minutes (get a good golden-brown color on both sides). Then let it rest on the side.
- Lower your heat and add butter, let it melt and add your chopped shallots,garlic and bacon. Stir and cook until fragrant rendering your bacon(2 minutes)
- Add your paprika, a pinch of salt and black pepper.
- Stir in your cream, gently scraping the bottom of your pan. Let it simmer for a minute and add your parmesan cheese. Stir until melted and covering the back of your spoon.
- Sprinkle your fresh herbs and stir.
- Add your pasta in the sauce and stir gently. Losen the sauce with the reserved pasta water.
- Garnish with your herbs and serve.
