Creamy Alfredo pasta, exotic mushroom with grilled chicken breast

Method:


  1. In small pot of boiling water, cook your pasta for a good 8 minutes (al-dente). Reserve a small amount of your pasta water for later use.
  2. Lightly season your chicken breast with lemonpepper seasoning and cayenne pepper.
  3. In a pan on medium heat drizzle with canola oil, fry off your chicken breast, cooking each side for 4 minutes (get a good golden-brown color on both sides). Then let it rest on the side.
  4. Lower your heat and add butter, let it melt and add your chopped shallots,garlic and bacon. Stir and cook until fragrant rendering your bacon(2 minutes)
  5. Add your paprika, a pinch of salt and black pepper.
  6. Stir in your cream, gently scraping the bottom of your pan. Let it simmer for a minute and add your parmesan cheese. Stir until melted and covering the back of your spoon.
  7. Sprinkle your fresh herbs and stir.
  8. Add your pasta in the sauce and stir gently. Losen the sauce with the reserved pasta water.
  9. Garnish with your herbs and serve.
