Grilled Beef fillet, Roasted Asparagus, Cream Mashed Potatoes And Coriander and Mint puree





Ingredients

Asparagus 
Potato 
Cream 
Coriander 
Butter
• Salt & Pepper 
Thyme 
Rosemary 
Garlic 

Beef fillet 
1. Heat up a pan with canola oil 
2. Season the fillet with salt and pepper 
3. Into a hot pan fry the fillet for 3-4 minutes on each side to get a perfect medium rare steak

Asparagus 
1. Cut off the hard ends and carefully wash the Asparagus under warm water 
2. Steam the Asparagus for 4 minutes, there after add into cold ice water to stop them from cooking further 
3. Heat up a pan and add Canola oil season the Asparagus with salt and pepper 
4. Fry them until they get a golden color 

Mashed Potatoes 
1. Steam the potatoes for 35 minutes 
2. Heat cream with Rosemary, thyme and garlic 
3. After 35 minutes mash the potatoes and add the warm cream 
4. Fix the potatoes until the cream has been incorporated into the potatoes and season with salt and pepper 

Coriander And Mint Puree
1. Add cream into a pan with garlic, thyme, green pea and chopped Asparagus 
2. Boil for 10 minutes 
3. Cool down the mixture add butter into the mixture and purée until it's nice and smooth
