Lemon cheese cake with a summer citrus salad

Biscuit Base
  1. In a blender, crush your biscuits until crumbled
  2. In a bowl, melt butter then add your crushed biscuits with coconut flakes and mix.
  3. Take the mixture and line into a baking tray then set aside in the fridge to firm up.
  4. Take the mixture and line into a baking tray.
  5. Put the tray in the fridge to cool the base 
Creamy filling 

  1. In a bowl add cream cheese, Castor sugar and the vanilla extract whisk until the mix is smooth.
  2. Add the sour cream and lemon juice and keep whisking, ( be careful not to over mix )
  3. Take the mixture and add on to the cool base
  4. Take the tray with the mixture into the fridge and cool for 30 to 35 minutes 
Citrus summer salad

  1. Take a bowl and put the orange segments, apples slices, lemon zest, lemon juice and chopped mint
