Lemon cheese cake with a summer citrus salad
Ingredients:
- 100g Cream cheese
- 80g Sour cream
- 50g Castor sugar
- 10g Vanilla extract
- 5g Lemo3n zest
- 10ml Lemon juice
- 150g Biscuits
- 80g Butter
- 10g Coconut flakes
- 5g Mint
- 5g Orange segments
- 5g Apple slices
Method:
Biscuit Base
- In a blender, crush your biscuits until crumbled
- In a bowl, melt butter then add your crushed biscuits with coconut flakes and mix.
- Take the mixture and line into a baking tray then set aside in the fridge to firm up.
- Take the mixture and line into a baking tray.
- Put the tray in the fridge to cool the base
Creamy filling
- In a bowl add cream cheese, Castor sugar and the vanilla extract whisk until the mix is smooth.
- Add the sour cream and lemon juice and keep whisking, ( be careful not to over mix )
- Take the mixture and add on to the cool base
- Take the tray with the mixture into the fridge and cool for 30 to 35 minutes
Citrus summer salad
- Take a bowl and put the orange segments, apples slices, lemon zest, lemon juice and chopped mint
