Prawn and avocado starter with a citrus dressing
Ingredients:
- 14 deveined and pealed prawns
- 1/2 sliced avocado
- Four season chopped lettuce ( Wash with water before serving )
- 1 teaspoon Lemon juice
- 1 teaspoon Honey
- 1 teaspoon crushed garlic
- Half a teaspoon Lemon zest
- Salt & Pepper
- Olive oil
- Lemon & herb seasoning
- Paprika
- Mayonnaise
Method :
Prawns
- Season the prawns with the lemon pepper and paprika season generously and set aside.
- Slice or roughly chop your lettuce leaves and set aside.
- Heat your pan on medium heat, drizzle with olive oil, place your prawns clockwise( this helps to know which one needs to be flipped first) and fry for 1 minute on each side.
Creamy lemon pepper dressing:
- In a bowl add Mayonnaise, lemon juice, honey, crushed garlic, lemon zest and mix well for the dressing, season with salt and pepper .
Four season lettuce and avocado :
- Assemble your sliced avocado on the plate with the chopped lettuce in the middle of the plate.
- Place your prawns around the greens.
- Lightly drizzle your dressing over your Lettuce and serve.
