 Roasted Beetroot And Cherry Tomato Salad 


This is one dish I'm actually proud of sharing with you, so one day I was looking at what I had in the fridge and that day i had Cherry tomatoes, 2 apples, feta cheese and some nuts . After that I asked myself what is it I can make with all these ingredients, this is what I came up with

Vinaigrette :


Method:

  1.  Peel the Beetroot and dice into 3mm shape and season with salt and pepper
  2.  Roast the Beetroot in the oven for 10 to 20 minutes and remove from the oven and cool down  
  3.  Use a melon baller to cut little balls from the apples, pickle the apples with 500ml water and 50ml apple cider vinegar for 5 minutes 
  4.  In a pan toast the nuts till they turn into a golden color then remove off the pan 
  5.  In the same pan add olive and lightly char your Cherry tomatoes and remove from the pan 
  6.  When you finish with preparing all your ingredients, take a bowl add all the ingredients you've cooked besides the feta cheese 
  7.  Add the Vinaigrette in the bowl and season again with salt and pepper and start Plating 


• When making this salad, always try to add the feta cheese last so it doesn't change color because the Beetroot turns to stain the cheese
