Pan fried baby hake with grilled corn, carrots and white wine sauce
Fish is another great source of protein and various nutrients, fish is a protein that dosen't take a long time to cook, it is easy to flavor but can be done wrong if the cook or chef uses the wrong spices.
Today I made one of my Easy recipes that dosen't require a lot of spices.
Ingredients:
- Hake fillet 130g
- Sweet potato 40g
- Carrots 45g
- Corn 60g
- White wine ( Dry ) 40ml
- Cream 50ml
- Flour 90g
- Butter 90g
- Salt & pepper
- Onion powder 10g
- Parsley 5g
- Olive oil 100ml
Method
Firstly we make our white sauce:
1 . Heat up a pan and add butter and let it melt down
2. When the butter has melted add your flour little by little and let it cook down for 2 to 3 minutes
3. After cooking down the flour add the cream and wine into the mixture and add salt & pepper , cook down for 1 to 2 minutes and remove from the stove.
Secondly grilled vegetables:
1. Peel all your vegetables and cut little brunoise of your carrots, use a fruit craver to cut little balls of your sweet potato
2. Boil water and add your potato and carrots in the pot for 3 minutes
3. Slice the corn from the cob and mix with the carrots and sweet potatoes and sauté in the pan till golden in color
Lastly the baby hake
1. Heat up a pan with olive oil and butter
2. Dry out the hake with paper towel and there after season the fish with onion powder and salt and pepper
3. Fry the fish skin side down to have that golden color
Plating Is all up to the person and it doesn't have to be perfect but any cook or chef always aims for a beautiful plate
