Balsamic Glazed Salmon, chargrilled broccolini, baked potato and smoked tomato puree
Ingredients:
- Salmon
- Broccolini
- Medium sized potatoes
- Tomatoes
- Butter
- Rosemary
- Thyme
- Black pepper & Salt
- Garlic
- Brown sugar
- Celery
- Carrots
- Onion
- Beef stock
- Sun dried tomatoes
Baked potato
• In a deep oven pan add the potatoes beef stock, Garlic , rosemary, thyme and pepper and close the pan with foil and put in the oven for 20 to 25 minutes
Smoked tomato puree
- Add celery, carrot , onions and garlic with butter and fry till translucent
- There after add the tomatoes into the pot and cook for a further 5 minutes
- Add the liquid smoke towards the end of the cook to add a smoky element into the sauce
- Take the mixture add into a blender and start blending and while blending add the beef stock into the blender to cut the thickness
Broccolini
- In a pot boil water, add salt & pepper then add the Broccolini in the pot for 5 minutes
- Remove the Broccolini in the pot and add into ice cold water to stop it from cooking further and to keep the color
- Take a frying pan add butter and garlic and fry the Broccolini for 5 minutes and remove
Balsamic Glaze
• Take a pot add balsamic vinegar, brown sugar and honey and reduce for 10 minutes or till thickness is to your preference
Balsamic Glazed Salmon
- In a hot pan add butter and garlic and fry the Salmon till golden
- When golden take the Balsamic reduction and add on to the Salmon and baked in the oven for 2 minutes
